3 carrots, chopped

2 parsnips, chopped

1 large sweet potato, cubed

2 Yukon gold potatoes, cubed

1 ½ cups dried green or brown lentils (rinsed)

1 (15-ounce) can chickpeas, drained and rinsed

6–7 cups vegetable broth (preferably low sodium)

Tomatoes & Depth
1 (14-ounce) can crushed tomatoes

2 tablespoons tomato paste

Herbs & Seasonings
1 teaspoon dried thyme

1 teaspoon dried rosemary

1 teaspoon smoked paprika

½ teaspoon ground cumin

1 bay leaf

½ teaspoon freshly ground black pepper

Salt to taste

2 cups chopped kale or Swiss chard

1 tablespoon fresh lemon juice
