This was a regular treat from Nana, and now it’s ours too! It’s incredibly refreshing and delicious! We make a big batch and enjoy it for weeks!

Ingredients:

  • 1 ripe pineapple (peeled and diced)

  • A handful of fresh mint leaves

  • 2 cups of sparkling water or coconut water for an extra tropical twist

  • 1 tablespoon of honey or agave syrup (optional)

  • Plenty of crushed ice

Instructions:

  1. Extract the Base: Blend half of the pineapple chunks with a splash of water until smooth. Strain the juice if you prefer a thinner consistency.

  2. Muddle the Mint: In a large pitcher, lightly crush the fresh mint leaves to release their essential oils.

  3. Assemble: Add the remaining pineapple chunks to the pitcher along with the ice.

  4. Combine: Pour the fresh pineapple juice and sparkling water over the fruit and mint.

  5. Serve: Stir gently and garnish with an extra sprig of mint.
